SUMMER SALADS

Chickpea & Spinach Salad

Salad Ingredients:

  • Cherry tomatoes (halved)
  • 1 can of chickpeas (drained & rinsed)
  • Red onion (halved & diced)
  • 1 bag fresh spinach
  • Feta cheese (crumbled)


Dressing ingredients:

  • 2 tsp. extra virgin olive oil
  • 1/2 tsp bacon grease 
  • 3 strips of bacon crumbled
  • Juice of 1/2 lemon
  • Salt and freshly ground black pepper
  • Sprinkle of extra sumac to serve

 

Accompaniments:

  • Flatbread or pita bread to serve


Instructions:

Mix salad ingredients, then make your dressing. Mix together, serve, and enjoy! 

Corn, Tomato & Avocado Salad

Ingredients:

  • Fresh corn on the cob cooked & cut from the cob (2-4 ears)
  • 1 avocado cut into cubes
  • 1 cup cherry tomatoes quartered
  • Fresh cilantro chpped
  • 1/2 red onion (diced)
  • 1/2 cucumber (optional)
  • Juice of 1/2 lime 
  • 1/2 tbsp lime zest
  • 1/4 tsp cayenne pepper
  • Pinch of Cumin
  • 2 tbsp olive oil
  • Salt & pepper to taste


Instructions:

Mix all solid ingredients, then your wet ingredients, then add seasoning and mix. The cayenne adds a little kick so add with caution if you don't like hot & spicy foods.

Kale & Butternut Squash Salad

Ingredients:

  • Kale that has been de-stemmed and torn into bite-sized pieces
  • 4 cups of cubed butternut squash 
  • 3 tbsp olive oil
  • 1/2 sweet onion (diced)
  • 1/2 tsp of brown sugar (optional)
  • 1 tsp salt
  • Pinch of cinnamon (optional)
  • 1/4 tsp cayenne (use half if sensative to spicy foods)

Instructions:

Simmer kale & onions in a little olive oil for about 5-minutes stirring frequently. Cook chopped buttnut squash on a non-stick baking sheet at 425 degrees for 30-minutes or until tender. Mix all ingredients, stir, se
